We view zero-proof creation as a distinct culinary challenge: one that requires even more precision than its spirited counterparts. Why? Because you don’t have ethanol to hide behind. You don’t have that natural bite or the systemic "warmth" of alcohol to carry the flavor profile.

If you aren't using shrubs in your summer beverage program, you’re missing the most powerful tool in the NA arsenal.

A shrub: at its simplest: is a drinking vinegar. By macerating fruit with sugar and then balancing it with a high-quality vinegar (like apple cider or champagne vinegar), you create a concentrated syrup that provides a massive hit of acidity and a fermented complexity that mimics the "bite" of spirits.

Pro tip: The June Edit.
Think of a Strawberry and Black Pepper Shrub. The sweetness of peak-season June strawberries, the sharp kick of cracked pepper, and the bright acidity of the vinegar. When topped with sparkling water, it’s not just refreshing: it’s electric. It has a length of flavor that lingers on the palate, making it the perfect companion for a corporate garden party.

Pillar 2: The Hidden Structure (Cold-Brewed Teas)

One of the hardest things to replicate in a non-alcoholic drink is tannin. In wine or aged spirits, tannins provide that dry, slightly astringent feel that cleanses the palate.

Enter cold-brewed tea.

By steeping high-quality loose-leaf teas in cold water for 12–24 hours, you extract the aromatics and the structure without the harsh, bitter tannins that come with hot brewing.

Pillar 3: The Familiar Framework (Dealcoholized Spirits)

We live in a golden age of dealcoholized spirits. Brands like Seedlip, Lyre’s, and Monday have paved the way for us to use "analog" spirits to build familiar frameworks.

If your event calls for a classic aesthetic: say, a milestone birthday celebration where everyone is drinking Martinis: you can provide a zero-proof version that looks and feels identical.

Here’s the thing: you don’t just swap the gin for an NA spirit and call it a day. You have to adjust the dilution. Because there’s no alcohol to "stand up" to the water, we often design these drinks to be stirred less or served over custom-carved ice to maintain the integrity of the botanicals.
